This very rare German honey was obtained from the nectar of tree of heaven blossoms in the areas of the Leipzig city in Germany. The tree of heaven is considered the fastest growing tree in Europe and is a perennial plant that belongs to the trees and ornamental plants. The smell is strong, especially of the male flowers.
The Arnsberg Forest is a landscape area in the Hochsauerland district and in the Soest district in North Rhine-Westphalia province in Germany. Its area between the rivers Ruhr and Möhne, which is almost completely free of settlements, consists of an ancient woodland through which very few traffic routes lead. Embedded in the large forest area is the Arnsberg Forest nature reserve with a size of 3,920.4 hectares. In the area the bees can collect the purest nectar undisturbed and produce fantastic honey.
Within the large forest area, which is particularly adorned with conifers, there are also - especially in larger clearings - some flowering plants that make up a small part of the mixture. So we can speak of a mixture of honeydew honey and nectar honey.

The main component of our forest blossom honey was made from honeydew. The bees do not fly to collect nectar for this honeydew honey, but suck up small droplets that can be found on the conifers. These droplets come from various types of aphids, which suck the bark and needles of the trees with enthusiasm, especially after days with lots of rain and sun, and then excrete the plant juices. These sweet droplets contain many plant substances from the forage and also absorb aromatic substances from the plant on which they were deposited. The bees suck up the droplets like nectar and transport them to their hive, where they process them into flavorful honey.
Anyone who loves the intense aroma will enjoy this honey as a spread and with anything that would like to be sweetened and flavored. When it comes to sweetening tea, we would like to point out that the inherent aroma comes into its own with mild types of tea, but can compete with the tea aroma with strong aromas.

The production site of our Schiesser beekeeping is in the Hintertaunus, one of the most untouched and natural places in the entire nature park. Here our bee colonies can let off steam as they please and draw nectar that shines with purity.
The Hochtaunus is sparsely populated and densely covered with coniferous forest. Deciduous forest predominates in the eastern Hintertaunus. Characteristic of the Taunus with its undulating to mountainous relief are extensive meadow orchards, which are particularly found in the Vordertaunus and on the eastern slopes of the Wetterau.
The deep dark color to almost black honey is unique among the otherwise light and mild types of blossom honey. An intense, extraordinary taste experience that is untypical, less sweet but strongly spicy, tart and malty. The aroma is a bit reminiscent of grain. This honey used to be used to flavor gingerbread. The consistency is rather viscous.
Unlike all other known types of grain, buckwheat does not belong to the grass family. It is a knotweed plant and therefore belongs to the pseudocereals. After flowering, it forms a triangular, shiny black nut that contains all 8 essential amino acids. The content of phosphorus, calcium, iron, copper and vitamins B1, B2, PP, B5 is also above average in relation to other cereals.
Since this honey is mainly loved for its health benefits due to its very special taste profile, its use in the kitchen depends very much on how much you like its taste. More than 500 lakes and thousands of small ponds, tarns, moors, streams and rivers make the Uckermark one of the most water-rich regions in Germany and offer bees a largely untouched paradise.
This sweet chestnut summer blossom honey is a regional honey that we harvest ourselves. It comes from the harvest area in Königstein/Taunus. A mixture of sweet chestnut blossoms and summer blossoms from the surrounding flora makes this special honey.
It has a wonderful taste and strong in character. The mix of spicy, tart and floral notes makes it an interesting and impressive regional delicacy.
